Product Description
We left the fruit in the paddock for three weeks later than the Bumberrah Station Chardonnay to build more fruit weight and flavour complexity. We picked the fruit by hand in three pickings to capture different flavour profiles and it was sorted several times to remove lesser quality fruit.
The fruit was gently pressed to French oak barrels and allowed to ferment using yeasts native to the vineyard. We stirred the lees regularly to give the wine a soft texture and to add creamy complexity.
The wine reflects this cool temperate maritime Gippsland Lakes site.
